Founded in 2020, Rover Coffee Lab is a specialty coffee roastery and coffee shop based in Sligo, Ireland.

We source and roast exceptional seasonal coffees with a focus on clarity, sweetness and balance. Our approach is simple: buy great coffees, roast them with precision and let the character of each lot speak for itself.

Every coffee is roasted in small batches on our ROEST P3000 in Sligo. 

Alongside roasting, we brew world-class coffees daily in our shop, showcasing a rotating selection of coffees from some of the best producers in the world.

We also work closely with wholesale partners who share our focus on quality, consistency and hospitality, supplying coffee shops, restaurants and businesses throughout Ireland.

Our coffees change throughout the year as fresh harvests arrive. We work with trusted importers and producers who value transparency, sustainability and long term relationships at every stage of the supply chain.
