Since 2020, from our home in Sligo on Ireland’s northwest coast, Rover Coffee Lab has been dedicated to sourcing, and sharing the finest in specialty coffee. What began as a space committed to showcasing exceptional coffees from around the world has evolved into a fully independent Irish coffee roastery.

We roast all of our coffee in Sligo using the ROEST P3000, a machine that allows us to profile each coffee with exceptional accuracy. This level of control helps us preserve the clarity, sweetness, and nuance that define high-end specialty coffee in Ireland.

Our philosophy is simple:
Highlight the natural expression of each coffee shaped by its variety, terroir, and processing to allow it to shine in the cup.

Sourcing from some of the world’s most respected producers, we select expressive, seasonal lots across a range of varieties, processes, and origins. Each coffee is roasted to reveal its individual flavour profile, ensuring a clean, vibrant cup.

Rover began as a gathering place for people who love coffee, conversation, and craft. As we’ve grown into a roastery, that ethos remains unchanged. Our shop in Sligo continues to serve as a hub for great coffee and genuine connection.
